New Recipes!
I recently bought the Weight Watchers cookbook and finally went shopping last week for the ingredients for some of the meals. Tonight was the first chance I got to actually cook one and it was so freaking good! That's not to say that I'm some amazing cook, because...well...I'm not. The recipe I tried was more fool-proof than anything else.
Anyway, we tried the Teriyaki Shrimp Kabobs. Wow. So good! I don't remember what the book said to put on the kabobs (besides the Teriyaki-marinated shrimp, of course), but I ended up using fresh pineapple chunks, onions and red bell peppers. Our grill is out of commission, so I broiled the kabobs instead, then put them over a bed of parbroiled rice.
Yum!
I'm excited to try the other recipes. I purposely chose meals that I've either never tried or never baked before. Some meals include veal, buffalo (though I can't find ground buffalo anywhere mainstream, so I'm going to have to resort to super-lean ground beef...argh!) and spinach fettuccine. This is going to be fun!

That sounds awesome! I can't say I've ever seen a recipe for buffalo. I would totally try it. There's actually a grocery store over the border in Wisconsin that carries buffalo, ostrich, and other exotic meats.
I'm definitely going to check out that cookbook.
Maybe I should try this cookbook, seeing as Im probably one of the worlds worse cooks. :p
We get buffalo or bison here in WA on occasion. I really like me a buffalo burger ;). I love it when I find some healthy recipes that actually taste really good.
I'll have to check out that cookbook... as long as the recipes are fast and easy.
So far, they've been quick and easy. There are some where you have to marinate the meat, but making the marinade is easy, then the actual preparation is fast. I'm LOVING the cookbook!
BTW, if you make Honey Mustard Pork, make sure it's done. While nothing compares to the savory juiciness of uncooked pork (isn't that double un-kosher...ness?), it's, um, not the most satisfying meal.
I love buffalo, it's easy to find when you're in South Dakota ;)
It looks like a good recipe book though!
beck its been a long time???? how you doing? still keeping it real?
Be really careful about the sodium contents. Weight Watchers likes to use things that are already pre-made. For instance it'll call for a can of progresso soup, and a bag of frozen chicken. I tried one of their recipes once and after eating it my tongue was tingling. I thought to myself, holly molly was that good or just way salty? I checked and the recipe because of two ingredients had more than 40% sodium!
Also, well first I"ll tell you my name is Jackie, I found your blog because I have a feed that tells me all about racquetball, and one day you played then blogged so it came up in my email, and I've followed your story ever since. I play racquetball, and I'm born and raised in Colorado, and I'm also on the quest to lose weight.
After that, I wanted to tell you about crossfit.com. Might come in handy when needing exercises, and its a pretty neat site. Good Luck!
